Grape tomatoes are a good choice for this Italian pasta recipes. They are just delicate enough to match with the bite sized pieces of chicken and because they are a member of the heirloom tomato family, much like the San marzano tomatoes, they have an extra sweet POP of flavor in your mouth.

Chicken and Pasta Recipe Ingredients:

1 lb of Chicken Breast diced
8oz Red Grape tomatoes cut in half lengthwise
8oz Yellow Grape tomatoes cut in half lengthwise
1 cup of yellow onion diced
1 lb of Mostaccioli pasta cooked al dente
4 cloves of garlic thinly sliced
1 cup Chopped Italian Parsley
Olive Oil
Splash of White Wine
Grated Parmigiano cheese
Salt and Peper to taste

Chicken and Tomatoes Mostaccioli Preparation:

Coat a large saute pan with Olive Oil and heat on medium heat. Add the garlic and onions and saute until translucent. Now is a good time to splash in your white wine and crank up the heat. Toss in the chicken and allow to cook (it won't take long) for about 3-5 minutes.

Allow the wine to evaporate.

When the chicken is nice and tender to the fork you can add the sliced grape tomatoes. Heat them with the chicken for 1 minute then add the chopped Italian parsley.

Remove the pan from the heat and add the pasta directly to the pan and grate the cheese on top and toss.
