Looks like our entire problem turned out to be the one USB 3.0 port on our laptop. We have three USB 2.0 and one 3.0 and of course that's what we were plugging into. As soon as I switched to a 2.0 port everything works fine. In fact it doesn't even seem to care that both the iPhone and "Documents on iPhone" are mounted in Nautilus, so far works just fine as long as I don't use the USB 3.0 port.
What if I don't have a USB 2.0 port available? My laptop has only USB 3.0 ports, so there's no way for me o work around this issue. Is this issue been tracked already? And if it is not, where can I file a bug report?
